These colorful autumn leaves cookies are easy and delicious! Dipping cookies is a great way to ice cookies, and kids love it.

For this recipe, we used All Natural Gingerbread Mix, but any cookie recipe will do.

Dipping Marbled Cookies - Four Rules to Success

1. For this recipe, you'll want what's called a flood consistency for your icing. That means the icing will be runny, similar pancake batter. This will let you colors blend together!

2. In your dipping bowl, have 1 base color like white or cream, and drizzle your fun colors over the top. Don't mix the colors into the base, just swirl them.

3. Hold the edges of the cookie as you dip, and use a scribe tool (or chopstick) to sweep up the drip into the cookie. Some drips off the edge will happen, it's okay!

4. Set them down on a flay dry and don't touch them for at least 4 hours until they are dry to the touch.

Ingredients

For the Icing

1/3 cup Meringue Powder
1 teaspoon Vanilla Extract
2 pounds confectioners sugar (also called powdered sugar)
1 Tablespoon Light Corn Syrup
1/2 cup warm water

Food Colors and Decor

BASE COLOR: Bouquets and Boutonnieres Gel Food Color
Woodland Brown Gel Food Color
Brick Red Gel Food Color
Sunshine Yellow Gel Food Color
Glamorous Gold Metallic Food Paint

Directions

Use a stand mixer with the whisk attachment to start.
Add to your mixing bowl: 1/3 cup Meringue Powder and 1/2 cup of warm water (start with a tiny bit more if you will not be adding the lemon juice from next step).
Whisk until doubled in size, 1 - 2 minutes. Do not over mix.
Add to your whisked mixture: all vanilla, and OPTIONAL 2 tablespoons fresh lemon juice. This is optional, but the lemon really cuts the sweetness of the icing nicely.
Mix until just incorporated.
Mix in 1 full pound of confectioners sugar. Mix until just incorporated.
Mix in light corn syrup. Mix until just incorporated.
Mix in 1 full pound of confectioners sugar. Mix until just incorporated.
Continue to mix for about 3 minutes on high - your icing will start to turn white and have a fluffy look. But do NOT overmix. Overmixing can cause the icing to collapse.
Add water to your icing ½ teaspoon at a time until you reach flood consistency, which is similar to pancake batter.
Divide your icing into 1 large bowl and 3 smaller bowls. The largest bowl is your base color, tint this a light color or leave it white. The three smaller bowls, tint to your desired mixing shades.
Gently spoon the mixing colors ON TOP of the base color, and use a chopstick to swirl the colors. Do not mix the color into the base.
Grabbing 1 cookie at a time, dip it into the surface of the icing to cover. Place each cookie on a flat surface to dry undisturbed for 4-8 hours.
Once the icing has set, decorate with edible gold paint.
