Strawberry Royal Icing

Directions

1. In the bowl of a stand mixer, whisk the meringue powder with the water until a light foam forms.

2. Add in the dried strawberry powder and combine them together.

3. With the paddle attachment, beat for about one minute on medium-low speed until everything is combined, scraping the bowl as needed.

4. Add a pound of the confectioners sugar and mix just until incorporated. Scrape the bowl and add the rest of the sugar.

5. Once incorporated, increase the speed to medium-high and beat 5-7 minutes, until the icing has doubled in volume.

6. Use to decorate cookies. If a thinner consistency is needed, just add water a little bit at a time, and incorporate until the desired consistency is reached.
